Healthy Recipe Friday - Brown Rice Supper

Well this week has been pretty busy, and a bit late getting this recipe up. but it's one I love to make and enjoy here. We hope you enjoy as well.

Brown Rice Supper
2 Tbl. Olive Oil
4 pork chops, cut 1/2 inch thick ( Can use chicken here in place of pork chops)
1/2 cup sliced mushrooms
1 medium onion, sliced
1 clove garlic, minced
1 cup uncooked brown rice
1- 10 1/2 oz. Can beef broth - low sodium (can use chicken broth if using chicken)
1 – 14 1/2 oz. Can stewed tomatoes
1/2 cup water
1 tsp. crushed thyme leaves

Directions:
1- In a 6-qt. Dutch oven over medium heat, in hot oil, cook pork chops(or chicken) until browned on all sides. Remove from pan.
2-To drippings, ad vegetables, onion and garlic; cook until vegetables are tender, stirring frequently.
3-Add rice; cook 1 minute, stirring constantly.
4-Stir in beef broth (or chicken broth), tomatoes with their liquid, water and thyme.
5-Arrange pork chops over rice. Heat till boiling. Reduce heat to low. Cover and simmer 1 hour or until rice is tender, stirring occasionally. Ad more water during cooking, if mixture appears dry. Uncover; let stand 5 minutes before serving.
